Cilantro Lime Pork Burritos

The list of “my favorite meals the Permanent Roommate makes” is extensive. It’s so long that I don’t even remember half the meals on the list. I could rattle off a few and completely miss a meal and need to be reminded “oh yeah, I love that one!”

The list of “Permanent Roommate’s favorite meals that I make” is much shorter. I don’t cook as often, and most of the meals are just following her recipes. There is one meal that’s hands-down her favorite out of them all and I found it myself. Pinterest, amma right?!? She claims to love it even more than some of the meals she prepares. Now that’s high praise!

This Cilantro Lime Pork Burrito recipe is insanely simple and damn delicious. You need just a few ingredients, a crock pot and the ability to ignore the intoxicating aromas until dinner time. Seriously, it’s hard. I put this on in the morning, and by lunch, I’m hovering over the crock pot and drooling. Luckily the glass cover is still on the pot.

Cilantro Lime Pork Burrito Recipe

Ingredients

1 pork tenderloin

1 taco seasoning packet

16 oz of salsa

2 limes squeezed

1 cup of frozen corn

1 cup of chopped fresh cilantro

Instructions: Coat pork with taco seasoning and put into slow cooker. Cover the pork with remaining ingredients and cook on low for 6-7 hours. About a half hour before serving, remove the pork and shred and mix back into the pot.

Just A Few Notes

This recipe also works well with chicken. We buy whole chicken breasts. PR claims the Cilantro Lime Chicken Burrito Recipe is her second favorite meal behind the pork. She might just be blowing smoke up my apron with all these compliments though.

Corn is optional. We sneak it in there because it’s an easy way to get the kids to eat vegetables. Cover it in red sauce and hope they don’t notice.

Experiment with the type of salsa. We’ve stuck to the common brand found in the chip aisle, but on a few occasions, ventured into the Mexican food aisle to try different salsas. The same goes for the taco seasoning packet. I’ve been threatening to one day make my own taco seasoning.

In the pictures above you’ll notice I used bear claws to shred the meat. Two forks work just as well. I received those claws as a gift, and they’re fun to use. I like yelling “I’M A BEAR!” whenever I’m shredding meat. I imagine bears do the same just before mauling prey.

Serve with soft taco shells, avocado, shredded cheese and sour cream. I also like to add jalapeno peppers to my burrito because I live on the goddamn edge.

Garnish with some cilantro to look fancy as hell.
